Hero Hirsh is no stranger to cheese, having spent nearly 20 years working as a cheesemonger, Academy of Cheese teacher, cheese writer and running cheese conveyor belt restaurants. She has been a regular judge at the World Cheese Awards since 2012, when she won their prestigious Cheesemonger of the Year title. It's already difficult to get her to stop talking about cheese, and gets harder every day as she works toward gaining the coveted Master of Cheese accolade. With cheese knife in hand and an extreme tolerance for lactose, Hero regularly hosts classes, tastings, training sessions and cheese-centric events in London.
