Flavors of the Maghreb & Southern Italy
Regular price $7.99 Save $-7.99Explore the unique Mediterranean flavors of the Maghreb region with over 100 authentic recipes!
The Arabic word Maghreb means “land where the sun sets.” The Maghreb is a multicultural Mediterranean region of North Africa which includes Tunisia, Algeria, Morocco, Mauritania, and Libya. It is bordered by the beautiful Mediterranean Sea, and in ancient times, the Maghreb included Spain, Sicily, and Malta. The history of this region is completely different from that of the rest of Africa, and today’s cuisine reflects those differences. It’s an inviting cuisine, made with fresh local and seasonal ingredients, that carries a diversity of flavors and time-honored traditions to the Maghreb table.
Before the Arab conquest, the Phoenicians, Greeks, Romans, Byzantines, and later the Italians and French, colonized the Maghreb. Each new culture that entered the region left unique influences and together they created a multicultural cuisine using aromatic spices, fresh herbs, citrus, dried fruits, nuts, fresh fish, lamb, chicken, pasta, rice, and copious fresh vegetables. Ancient civilizations such as Phoenicians and Romans spread the cultivation of wheat. The Moors brought citrus and olives from Spain. The Berbers gave birth to couscous. Fennel, peas, and artichokes arrived with the Italian settlement, and the baguette, salad Niçoise, and mayonnaise were brought by the French when they colonized the area. Thus, the food of Maghreb became a mélange of Sicilian, French, Spanish, Arabic, and Berber cuisine.
Three generations ago, Alba Carbonaro Johnson’s family emigrated from Sicily to Tunisia. With this unique cultural vantage point, she learned to cook traditional Maghrebi dishes as well as the southern Italian specialties of her family. This book brings the best of both these Mediterranean cuisines together in simple, delicious recipes that readers will turn to again and again.
Sample recipes:
- Crostini with Dill and Pecorino
- Spicy Cauliflower Minestra
- Couscous for Festive Occasions (Seffa)
- Lamb Chops in Dried Fig Sauce
- Baked Whole Bass with Chermoula
- Shrimp Speidini with Golden Breadcrumbs and Pistachios
- Rustic Pizza Stuffed with Red Onions, Pine Nuts, and Golden Raisins

Foods & Flavors from Nepal
Regular price $9.99 Save $-9.99Birthplace of Buddha and home to stunning Himalayan peaks, Nepal is also known for its unique cuisine and rich cultural traditions. Nepal is a landlocked country that had little contact with the outside world for centuries, resulting in a unique culinary culture that was not influenced by other cuisines. After opening borders in the 1950s, however, Nepal’s cuisine evolved to take on influences from neighboring India, China and Tibet. Those influences, combined with Nepal’s vast cultural and geographic diversity, result in a singular cuisine characterized by the simplicity of fresh local ingredients that are artfully paired with herbs and spices.
A Nepali staple is Daal-Bhaat-Tarkaari (lentil-rice-vegetable), found in many variations and flavors. It includes boiled rice accompanied by daal made from dried beans, lentils, or peas. A variety of fresh vegetables and leafy greens round out the meal. The use of spices is mild and subtle, but meals are often served with a side of spicy pickles. Meat, poultry, and fish are served only occasionally, mostly during celebrations.
Author Jyoti Pathak’s first cookbook Taste of Nepal won a Gourmand World Cookbook award for Best Foreign Cuisine Cookbook and showcased the foods and recipes of her native Nepal to a wider audience. This new cookbook brings the foods and flavors of Nepal alive with color photographs throughout, notes about important Nepali customs, festivals and holidays, and a collection of 185 recipes that spans traditional Nepali fare to popular fusion dishes, street foods and the modern Nepali table. Also included are helpful chapters on Nepali ingredients, utensils and cooking techniques and a glossary of Nepali-English words.

Footprints of Polonia
Regular price $14.99 Save $-14.99The innumerable contributions of Polish immigrants and their descendants on communities in North America can be seen on monuments, bridges, churches, cultural centers, and cemeteries across the continent. These “footprints” of Polonia (the Polish diaspora), commemorating towering events and figures from history that are a source of pride among Polish Americans, are cataloged for readers in this unique volume. From Revolutionary War heroes Tadeusz Kosciuśzko and Casimir Pulaski to more recent figures like Pope John Paul II and political movements like Solidarity, statues and historic sites all over North America pay homage to their contributions and importance.
A version of this guide was originally published in 1992, and in the intervening decades, many shifts have occurred in Polish American communities. The Polish American Historical Association (PAHA) initiated work on this new volume with the goal of highlighting new sites of Polish-interest and the important ways in which Polish immigrants contributed to history, politics, arts and society. This book explores key Polish-interest sites in forty-six U.S. states, eight Canadian provinces and parts of Mexico and the Caribbean as well.
This project is based on the input of volunteers from Polish organizations all over North America, who helped identify the most important sites in their region and provided summaries and pictures for over 200 entries. The guide is organized alphabetically by states and provinces, with entries that describe the historical significance of each site. Most entries also include a color photo. Informative prefaces and introductions from the editor and other historians help contextualize the culture of Polish immigrants and their deep, lasting connection to Poland.
Footprints of Polonia can serve as the perfect travel companion for anyone who wants to learn about the rich history and heritage of the Polish diaspora. It is also an excellent resource for Polish language schools and Polish American organizations who want to learn more about and take pride in sites of interest in their area.

Icelandic is a North-Germanic language related to Norwegian, Danish and Swedish. The language can be traced back to Old Norse brought by settlers from Norway in the 9th and 10th centuries. Due in large part to Iceland’s isolation and remote location, the linguistic changes that occurred in other Scandinavian languages are not seen in Icelandic, which still has complicated grammar systems such as four cases for nouns and three genders (male, female, and neuter). Pharaoh
Regular price $9.99 Save $-9.99A groundbreaking new translation of the only historical novel by noted Polish writer Bolesław Prus.
“ . . . unique in world literature of the nineteenth century”--Czesław Miłosz
Imbued with poetry, leavened with humor, and
graced with moments of transcendent beauty, Pharaoh offers a compelling
picture of life at every level of ancient Egyptian society. As the story unfolds, Egypt is experiencing
internal stresses and external threats that will culminate in the fall of its
Twentieth Dynasty and New Kingdom. The young Pharaoh Ramses learns that
challenging power leaves him vulnerable to seduction, defamation, intimidation
and even assassination. The ultimate lesson learned by Ramses is the power of
knowledge.
Prus is a distinctive voice in world literature and was Joseph Conrad’s favorite Polish writer. This new edition of Christopher Kasparek’s translation of Pharaoh vividly brings this extraordinary novel to life. It includes a detailed foreword and annotations, based on extensive research and textual refinements, that will enhance the reader’s appreciation not only for ancient Egypt, but also for Prus’ composition process.
Pharaoh has been translated into twenty-three languages and was adapted as a 1966 Polish feature film.

Polish Customs, Traditions & Folklore
Regular price $9.99 Save $-9.99“A richly detailed and well-informed month-by-month accounting of all the major Polish customs and traditions practiced over the centuries. Ms. Knab stirs and reawakens our ancestral memory.”
―The Kosciuszko Foundation Newsletter
Now in a paperback edition with illustrations, historical black and white photographs, and color photographs throughout the book!
This unique, well-researched reference is arranged by month, showing the various occasions, feasts and holidays prominent in Polish culture―beginning with December it continues through Holy Week Customs, superstitions, beliefs and rituals associated with farming, Pentecost, Corpus Christi, midsummer, harvest festival, wedding rites, Name Days, birth and death. There is also a chapter on Polish pastimes and games for children.
Many of the customs and traditions described in the book have been lost even in today's modern Poland. World wars, massive immigration, the loss of the oral tradition, urbanization and politics have changed the face of a once agrarian people and their way of life throughout the calendar year. The changes, however, have not been able to erase the memory of that way of life completely.
Many communities of the Polish diaspora throughout the world still feel connected to Poland and choose to reenact harvest celebrations, reminding themselves of their ancestors' reverence for the grains and gifts of bread. The sharing of opłatek, the Christmas Eve wafer, and the words of love while doing so, continue to bind family and friends together. Although the purpose and meaning may have been lost and forgotten, the oczepiny ceremony (the unveiling) is still the mainstay of almost every wedding where the bride declares Polish heritage.
This invaluable resource is perfect for anyone who claims Polish ancestry, diligently practicing that which they learned at their parents' and grandparents' knees. It is for families who wish to teach Polish heritage and customs to their children, and for anyone seeking to learn more about their Slavic roots.

Spirit of Place
Regular price $9.99 Save $-9.99“They are works of art that speak to the creative spirit that once stirred within a heart to carve a statue, to gather stones to build a foundation, or gather words to form a poem or mix colors for a painting; they are messages from the past telling what at one time was important to this person, to this village, to a city block.”—from the author’s Introduction
It is said that every country has its own genus loci or “spirit of place.” Poland’s distinct character can be found in the tens of thousands of roadside chapels, crosses and shrines that dot both its cities and countryside. A thousand years of Christianity, and the Polish Catholic tradition in particular, have left their mark on the country’s landscape. It is impossible not to notice the religious statues and little chapels that seem to be everywhere. Enter a courtyard in Warsaw or Kraków and discover a statue of the Blessed Virgin Mary mounted on a pedestal with fresh flowers at her feet. Drive through a small town, and you’ll spy a niche under the eaves of a home containing a figure of the Sacred Heart of Jesus or a little wooden box on a tree holding a small image of Our Lady of Częstochowa. All of them seem to blend harmoniously with the environment and beautify it. What are these objects? What do they mean? How did they come to be in this particular place? Why are they important?
Acclaimed Polish-American author Sophie Hodorowicz Knab explores the origins and purposes of these roadside shrines, examining the different types of shrines and the significance of the various religious figures represented in them to the people of Poland. Additional chapters are devoted to the artists and sculptors who created the shrines, the role these local shrines played in the annual holidays, customs and traditions of the community, and their role in everyday life as well as death. Color photographs throughout depict the artistry and local setting of these shrines.
This exploration of Poland’s roadside shrines is a unique lens through which the reader can learn about Polish history and culture. For anyone interested in Polish history, religious traditions, art and ancestry, this book offers much to explore.

The Best of Afghan Cooking
Regular price $8.99 Save $-8.99The most comprehensive collection of authentic Afghan recipes published in English, this cookbook brings the legendary hospitality and foods of the Afghan table to readers everywhere.
Since ancient times, Afghanistan’s location in the heart of Central Asia has made it a crossroads for multiple cultures and culinary influences. The ancient city of Kabul was a hub for European, Chinese and Indian merchants as well as intellectuals and spiritual leaders. In this context, Afghanistan’s rich and multifaceted culinary identity evolved.
To this day, Afghans retain the tradition of preparing food with freshly harvested ingredients. In most villages, flour is still ground in local mills and cows are milked daily, and the milk is then processed into fresh butter or yogurt. Kabobs, ranging from chicken, beef, lamb and fish, are seasoned with delicate spices before grilling. A variety of fresh vegetables, fruits, and herbs, along with lentils and meat, are used to prepare traditional stews called qurmas. Considered Afghanistan’s national food, rice dishes called palow are cooked with meat, onions, and distinctive spices such as cumin, cardamom, cinnamon, cloves, and black pepper. Dough prepared with fresh ingredients is shaped into bread, cookies, and cakes before being baked in a preheated ground oven called a tandoor. Aromatic spices and crunchy roasted nuts combined with fresh milk and wheat create unique desserts that are simple to prepare but deliver impressive results
Kabul native Zarghuna Adel brings a lifetime of cooking experience and years of research into this unique cookbook, which features authentic Afghan recipes that were lost or forgotten in the course of four decades of war and displacement. This volume features over 225 recipes, each with easy-to-follow instructions and a color photograph. Fifteen chapters cover the range of Afghan culinary offerings, from appetizers, soups, salads, and main dishes to condiments and desserts, and each chapter includes a detailed introduction to the history, origins, and cultural traditions that surround the recipes.

Wearing the Letter P: Polish Women as Forced Laborers in Nazi Germany, 1939-1945
Regular price $9.99 Save $-9.99In this unflinching, detailed portrait of a forgotten group of Nazi forced labor survivors, author Sophie Horodowicz Knab reveals the personal stories of hundreds of Polish women who were forced to leave their homes to work in Nazi German factories and farms during World War II. From sexual assault, starvation, and illness to tremendous physical and psychological trauma, the atrocities these women suffered have never been fully explored until now.
Required to sew a large letter "P" onto their jackets, thousands of women, some as young as age 12, were taken from their homes in Poland and forced to work in Hitler’s Germany for months and years on end. As mothers, wives, daughters, and sisters, female Polish forced laborers faced a unique set of challenges and often unspeakable conditions because of their gender. Compelled to learn more about her own mother’s experience as a forced laborer, Sophie Hodorowicz Knab embarked on a personal quest to uncover details about this overlooked aspect of World War II history. She conducted extensive research in archives in the U.S., London, and Warsaw for over 14 years to piece together facts and individual stories.
Knab explains how it all happened, from the beginning of Nazi occupation in Poland to liberation: the roundups; the horrors of transit camps; the living and working conditions of Polish women in agriculture and industry; and the anguish of sexual exploitation and forced abortions—all under the constant threat of concentration camps. Knab draws from documents, government and family records, rare photos, and most importantly, numerous victim accounts and diaries, letters and trial testimonies, finally giving these women a voice and bringing to light the atrocities that they endured.
