A surprising history of how the pig has influenced Jewish identity
Jews do not eat pig. This (not always true) observation has been made by both Jews and non-Jews for more than three thousand years and is rooted in biblical law. Though the Torah prohibits eating pig meat, it is not singled out more than other food prohibitions. Horses, rabbits, squirrels, and even vultures, while also not kosher, do not inspire the same level of revulsion for Jews as the pig. The pig has become an iconic symbol for people to signal their Jewishness, non-Jewishness, or rebellion from Judaism. There is nothing in the Bible that suggests Jews are meant to embrace this level of pig-phobia.
Starting with the Hebrew Bible, Jordan D. Rosenblum historicizes the emergence of the pig as a key symbol of Jewish identity, from the Roman persecution of ancient rabbis, to the Spanish Inquisition, when so-called Marranos (“Pigs”) converted to Catholicism, to Shakespeare’s writings, to modern memoirs of those leaving Orthodox Judaism. The pig appears in debates about Jewish emancipation in eighteenth-century England and in vaccine conspiracies; in World War II rallying cries, when many American Jewish soldiers were “eating ham for Uncle Sam;” in conversations about pig sandwiches reportedly consumed by Karl Marx; and in recent deliberations about the kosher status of Impossible Pork.
All told, there is a rich and varied story about the associations of Jews and pigs over time, both emerging from within Judaism and imposed on Jews by others. Expansive yet accessible, Forbidden offers a captivating look into Jewish history and identity through the lens of the pig.

Flavors of al-Andalus
Regular price $39.95 Save $-39.95This cookbook explores the fascinating story of the deep and lasting influences that Islamic culture has left on modern Spanish cooking.
Muslims first invaded the Iberian peninsula in 711 CE, crossing the narrow straits from North Africa and taking over most of what would become the country of Spain. The newly-conquered land initially under the caliphate of Damascus, was called al-Andalus and at one time covered almost the entire Iberian peninsula.
At his palace of Medina Azahar around 950 CE, the Caliph of Córdoba dined on refined dishes of almond cream, lamb cooked with spices, eggplant stuffed with meat and scented with cinnamon, and carrot salad with sprigs of mint. The kingdoms of al-Andalus lasted eight centuries, ending in 1492 with the fall of Granada. Islamic culture left a deep mark on the country that became Spain—on language, science, literature and most certainly on cuisine.
Author and Spanish cooking expert Janet Mendel tells the story of the Moorish influence on Spanish cooking through 120 recipes for modern-day dishes, from salads and vegetables to fish, poultry and meat to sweets and pastries, that trace their heritage to foods served in medieval times. Dishes from this era include exotic spices such as saffron, the use of fruits and almonds with savory dishes, and honeyed sweets and pastries. The flavors of al-Andalus live on in modern Spanish cooking and are what makes Spain’s cuisine distinctive from the rest of Europe.
Sample recipes:
- White Gazpacho with Grapes (Ajo Blanco con Uvas)
- Spinach with Raisins and Pine Nuts (Espinacas con Pasas y Piñones)

Gilded Age Cocktails
Regular price $21.00 Save $-21.00A delightful romp through America’s Golden Age of Cocktails
The decades following the American Civil War burst with invention—they saw the dawn of the telephone, the motor car, electric lights, the airplane—but no innovation was more welcome than the beverage heralded as the “cocktail.”
The Gilded Age, as it came to be known, was the Golden Age of Cocktails, giving birth to the classic Manhattan and martini that can be ordered at any bar to this day. Scores of whiskey drinks, cooled with ice chips or cubes that chimed against the glass, proved doubly pleasing when mixed, shaken, or stirred with special flavorings, juices, and fruits. The dazzling new drinks flourished coast to coast at sporting events, luncheons, and balls, on ocean liners and yachts, in barrooms, summer resorts, hotels, railroad train club cars, and private homes.
From New York to San Francisco, celebrity bartenders rose to fame, inventing drinks for exclusive universities and exotic locales. Bartenders poured their liquid secrets for dancing girls and such industry tycoons as the newspaper mogul William Randolph Hearst and the railroad king “Commodore” Cornelius Vanderbilt.
Cecelia Tichi offers a tour of the cocktail hours of the Gilded Age, in which industry, innovation, and progress all take a break to enjoy the signature beverage of the age. Gilded Age Cocktails reveals the fascinating history behind each drink as well as bartenders’ formerly secret recipes. Though the Gilded Age cocktail went “underground” during the Prohibition era, it launched the first of many generations whose palates thrilled to a panoply of artistically mixed drinks.

Home coffee-making authority and author of Craft Coffee: A Manual introduces you to the wide world of coffee flavor
Have you ever purchased coffee based on delectable flavor notes—strawberry jam, milk chocolate, hazelnut—only to find none of it in your cup? It’s a common experience among coffee lovers.
These days, high-quality coffee can taste all kinds of ways, thanks to roasting techniques that help draw out the qualities of the bean. In addition to that characteristic coffee taste, you really can find hints of fruit, chocolate, and nuts in your cup—all it takes is a little knowledge, a little practice, and the ability to slow down and savor.
That’s where How to Taste Coffee comes in. With the same accessible, no-shame approach she took in Craft Coffee, bestselling author Jessica Easto explains why flavor notes are not always as straightforward with coffee as they are with other beverages, such as wine, beer, and spirits. You’ll learn how our senses perceive coffee, what creates and affects coffee flavor, and how to practice your sensory skills, using the same tools and resources as coffee professionals.
With nineteen exercises designed to help you identify and talk about what you’re tasting, you’ll come away with a more developed palate, an improved ability to choose coffee you’re going to love, and a better understanding of the astounding complexity contained within these tiny beans.
A must-read for any lover of coffee, How to Taste Coffee inspires readers to taste widely and sip consciously, with more appreciation, more discernment, and a greater sense of wonder.

The Truth about Baked Beans
Regular price $34.00 Save $-34.00Forages through New England’s most famous foods for the truth behind the region’s culinary myths
Meg Muckenhoupt begins with a simple question: When did Bostonians start making Boston Baked Beans? Storekeepers in Faneuil Hall and Duck Tour guides may tell you that the Pilgrims learned a recipe for beans with maple syrup and bear fat from Native Americans, but in fact, the recipe for Boston Baked Beans is the result of a conscious effort in the late nineteenth century to create New England foods. New England foods were selected and resourcefully reinvented from fanciful stories about what English colonists cooked prior to the American revolution—while pointedly ignoring the foods cooked by contemporary New Englanders, especially the large immigrant populations who were powering industry and taking over farms around the region.
The Truth about Baked Beans explores New England’s culinary myths and reality through some of the region’s most famous foods: baked beans, brown bread, clams, cod and lobster, maple syrup, pies, and Yankee pot roast. From 1870 to 1920, the idea of New England food was carefully constructed in magazines, newspapers, and cookbooks, often through fictitious and sometimes bizarre origin stories touted as time-honored American legends. This toothsome volume reveals the effort that went into the creation of these foods, and lets us begin to reclaim the culinary heritage of immigrant New England—the French Canadians, Irish, Italians, Portuguese, Polish, indigenous people, African-Americans, and other New Englanders whose culinary contributions were erased from this version of New England food. Complete with historic and contemporary recipes, The Truth about Baked Beans delves into the surprising history of this curious cuisine, explaining why and how “New England food” actually came to be.

Jazz Age Cocktails
Regular price $21.00 Save $-21.00How the Prohibition law of 1920 made alcohol, savored in secret, all the more delectable when the cocktail shaker was forced to go “underground”
“Roaring Twenties” America boasted famous firsts: women’s right to vote, jazz music, talking motion pictures, flapper fashions, and wondrous new devices like the safety razor and the electric vacuum cleaner. The privations of the Great War were over, and Wall Street boomed.
The decade opened, nonetheless, with a shock when Prohibition became the law of the land on Friday, January 16, 1920, when the Eighteenth Amendment banned “intoxicating liquors.” Decades-long campaigns to demonize alcoholic beverages finally became law, and America officially went “dry.”
American ingenuity promptly rose to its newest challenge. The law, riddled with loopholes, let the 1920s write a new chapter in the nation’s saga of spirits. Men and women spoke knowingly of the speakeasy, the bootlegger, rum-running, black ships, blind pigs, gin mills, and gallon stills. Passwords (“Oscar sent me”) gave entrée to night spots and supper clubs where cocktails abounded, and bartenders became alchemists of timely new drinks like the Making Whoopee, the Petting Party, the Dance the Charleston. A new social event—the cocktail party staged in a private home—smashed the gender barrier that had long forbidden “ladies” from entering into the gentlemen-only barrooms and cafés.
From the author of Gilded Age Cocktails, this book takes a delightful new romp through the cocktail creations of the early twentieth century, transporting readers into the glitz and (illicit) glamour of the 1920s. Spirited and richly illustrated, Jazz Age Cocktails dazzles with tales of temptation and temperance, and features charming cocktail recipes from the time to be recreated and enjoyed.

Midcentury Cocktails
Regular price $21.00 Save $-21.00A delightful history of cocktails from the era of new interstate highways, sprouting suburbs, and atomic engineering
America at midcentury was a nation on the move, taking to wings and wheels along the new interstate highways and in passenger jets that soared to thirty thousand feet. Anxieties rippled, but this new Atomic Age promised cheap power and future wonders, while the hallmark of the era was the pleasure of an evening imbibing cocktails in mixed company, a middle-class idea of sophisticated leisure. This new age, stretching from the post–World War II baby boom years through the presidency of General Dwight Eisenhower into the increasingly volatile mid-1960s, promised affordable homes for those who had never dreamed of owning property and an array of gleaming appliances to fill them. For many, this was America at its best—innovation, style, and the freedom to enjoy oneself—and the spirit of this time is reflected in the whimsical cocktails that rose to prominence: tiki drinks, Moscow mules, Sea Breezes, Pina Coladas, Pink Squirrels, and Sloe Gin Fizzes.
Of course, not everyone was invited to the party. Though the drinks were getting sweeter, the racial divide was getting more bitter—Black Americans in search of a drink, entertainment, or a hotel room had to depend on the Green Book for advice on places where they would be welcome and safe. And the Cold War and Space Race proceeded ominously throughout this period, as technological advances alternately thrilled and terrified.
The third installment in Cecelia Tichi’s tour of the cocktails enjoyed in various historical eras, Midcentury Cocktails brings a time of limitless possibilities to life though the cocktails created, named, and consumed.

As American as Shoofly Pie
Regular price $39.95 Save $-39.95When visitors travel to Pennsylvania Dutch Country, they are encouraged to consume the local culture by way of "regional specialties" such as cream-filled whoopie pies and deep-fried fritters of every variety. Yet many of the dishes and confections visitors have come to expect from the region did not emerge from Pennsylvania Dutch culture but from expectations fabricated by local-color novels or the tourist industry. At the same time, other less celebrated (and rather more delicious) dishes, such as sauerkraut and stuffed pork stomach, have been enjoyed in Pennsylvania Dutch homes across various localities and economic strata for decades.
Celebrated food historian and cookbook writer William Woys Weaver delves deeply into the history of Pennsylvania Dutch cuisine to sort fact from fiction in the foodlore of this culture. Through interviews with contemporary Pennsylvania Dutch cooks and extensive research into cookbooks and archives, As American as Shoofly Pie offers a comprehensive and counterintuitive cultural history of Pennsylvania Dutch cuisine, its roots and regional characteristics, its communities and class divisions, and, above all, its evolution into a uniquely American style of cookery. Weaver traces the origins of Pennsylvania Dutch cuisine as far back as the first German settlements in America and follows them forward as New Dutch Cuisine continues to evolve and respond to contemporary food concerns. His detailed and affectionate chapters present a rich and diverse portrait of a living culinary practice—widely varied among different religious sects and localized communities, rich and poor, rural and urban—that complicates common notions of authenticity.
Because there's no better way to understand food culture than to practice it, As American as Shoofly Pie's cultural history is accompanied by dozens of recipes, drawn from exacting research, kitchen-tested, and adapted to modern cooking conventions. From soup to Schnitz, these dishes lay the table with a multitude of regional tastes and stories.

Regular price $95.00 Save $-95.00Drawing on social and political history as well as the history of science and popular culture, Dangerous Digestion examines how American ideas about dietary reform mirror broader thinking about social reform. Inspired by new scientific studies of the human body as a metabiome—a collaboration of species rather than an isolated, intact, protected, and bounded individual—E. Melanie DuPuis invokes a new metaphor—digestion—to reimagine the American body politic, opening social transformations to ideas of mixing, fermentation, and collaboration. In doing so, the author explores how social activists can rethink politics as inclusive processes that involve the inherently risky mixing of cultures, standpoints, and ideas.

In the fifteen years since Paula Haney started Hoosier Mama Pie Company, it has become both a local favorite and national destination, widely regarded as one of the top pie shops in the country. But not everyone wants pie for breakfast, and after opening an Evanston location that opened at 6:30 a.m., Haney and her team began to dream up new sweet and savory bakes for the perfect morning.

Grandbaby Cakes

From blooming tree-picked fruit to farm-raised eggs and fresh-churned butter, Big Mama used what was readily available to invent completely original treats. The Hoosier Mama Book of Pie
Regular price $34.95 Save $-34.95Since starting her career as a pastry chef at Trio, one of Chicago's top fine-dining restaurants, Haney dreamed of opening her own pie shop. Exhilarating and exhausting days spent creating fabulous new desserts to keep up with the restaurant's head chef--a then-unknown Grant Achatz, who would go on to culinary superstardom--left Haney in search of classic comfort food on her days off. Her disappointment in being unable to find a good slice of pie in all of Chicago led her to one conclusion: she needed to open her own store.
Specializing in hand-made, artisanal pies that only use locally sourced and in-season ingredients, Hoosier Mama Pie Company has become a local favorite and a national destination gaining praise from Bon Appetit, the Food Network, and Food & Wine as one of the top pie shops in the country. Now, The Hoosier Mama Book of Pie delivers all the sumptuous secrets of buttery crusts, fruity fillings, creams and custards, chess pies, over-the-top pies, and even the stout and hearty savory pie. The practically oriented, easy-going, and accessible style of this book will help bakers both new and old make the perfect pie for every occasion.
On top of all of this, The Hoosier Mama Book of Pie also includes tips on technique, fascinating historical anecdotes, and an emphasis on special seasonal recipes, as well as quiches, hand pies, and scones. This beautifully photographed and designed book has the classic retro feel of the mid-20th century golden age of pie, and all the warmth and personality of the Hoosier Mama Pie Co.'s cozy Chicago storefront. The focus on using local produce and employing the farm-to-table philosophy gives the book a contemporary twist, helping home bakers make the freshest, most delicious pies imaginable. Now readers can take a little piece of the Hoosier Mama Pie Company anywhere they go.

Craft Coffee: A Manual
Regular price $24.95 Save $-24.95This comprehensive but accessible handbook is for the average coffee lover who wants to make better coffee at home. Unlike other coffee books, this one focuses exclusively on coffee—not espresso—and explores multiple pour-over, immersion, and cold-brew techniques on 10 different devices.
Thanks to a small but growing number of dedicated farmers, importers, roasters, and baristas, coffee quality is at an all-time high. But for nonprofessionals, achieving café quality at home can seem out of reach. With dozens of equipment options, conflicting information on how to use that equipment, and an industry language that, at times, doesn’t seem made for the rest of us, it can be difficult to know where to begin.
Craft Coffee: A Manual, written by a coffee enthusiast for coffee enthusiasts, is a comprehensive guide to improving your brew at home. The book provides all the information readers need to discover what they like in a cup of specialty coffee—and how to replicate the perfect cup day after day. From the science of extraction and brewing techniques to choosing equipment and deciphering coffee bags, Craft Coffee focuses on the issues—cost, time, taste, and accessibility—that home coffee brewers negotiate and shows that no matter where you are in your coffee journey, you can make a great cup at home.

Eating Right in the Renaissance
Regular price $47.95 Save $-47.95Eating Right in the Renaissance takes us through an array of historical sources in a narrative that is witty and spiced with fascinating details. Why did early Renaissance writers recommend the herbs parsley, arugula, anise, and mint to fortify sexual prowess? Why was there such a strong outcry against melons and cucumbers, even though people continued to eat them in large quantities? Why was wine considered a necessary nutrient? As he explores these and other questions, Albala explains the history behind Renaissance dietary theories; the connections among food, exercise, and sex; the changing relationship between medicine and cuisine; and much more.
Whereas modern nutritionists may promise a slimmer waistline, more stamina, or freedom from disease, Renaissance food writers had entirely different ideas about the value of eating right. As he uncovers these ideas from the past, Ken Albala puts our own dietary obsessions in an entirely new light in this elegantly written and often surprising new chapter on the history of food.

The Art of Cooking
Regular price $38.95 Save $-38.95The Art of Cooking, unlike the culinary manuals of the time, is a true gastronomic lexicon, surprisingly like a modern cookbook in identifying the quantity and kinds of ingredients in each dish, the proper procedure for cooking them, and the time required, as well as including many of the secrets of a culinary expert. In his lively introduction, Luigi Ballerini places Maestro Martino in the complicated context of his time and place and guides the reader through the complexities of Italian and papal politics. Stefania Barzini's modernized recipes that follow the text bring the tastes of the original dishes into line with modern tastes. Her knowledgeable explanations of how she has adapted the recipes to the contemporary palate are models of their kind and will inspire readers to recreate these classic dishes in their own kitchens. Jeremy Parzen's translation is the first to gather the entire corpus of Martino's legacy.

Perfect Pairings

His clear, educational, and entertaining approach towards intimidating gastronomical questions provides information for all readers, professional and amateur chefs alike.

General Viticulture
Regular price $73.95 Save $-73.95This new edition has been revised throughout. The chapters on vine structure, vine physiology, the grape flower and berry set, development and composition of grapes, and means of improving grape quality add to our knowledge of the vine and its functions. The text is designed to enable those concerned with either vine or fruit problems to arrive at considered diagnoses. The student will find the text and the cited references a comprehensive source of information.
The grape and allied industries should welcome the updating of the major portion of the book. Here the emphasis is on modern practices in vineyard management in arid and semi-arid regions—with special reference to California. Full and detailed treatment is provided or propagation, supports, training young vines, pruning, cultivation and chemical weed control, irrigation, soil management, diseases and pests, and harvesting, packing and storage.
The practices recommended in the book are based on the extensive research conducted in California and elsewhere by the authors and their distinguished colleagues. Examples of practices based on experiments are: methods of propagation which by-pass the usual one-year-in-the-vine-nursery; pruning as related to leaf area and time of leaf functioning, and its effect on berry set and fruit development; virus disease control through thermotherapy and soil fumigation; pests held in check by sanitary, chemical, and biological procedures; irrigation practices as related to soil texture. Tissue analyses are employed as guidelines indicating the mineral deficiencies or excesses of vines. Machine harvesting of raisins (with cane cutting) and some wine grape varieties with problems are described.
The regional recommendations for table and raisin varieties are based on log years of observations, while those for wine grapes are the results of studies of the interrelation of variety and the heat summation of the different climatic areas.
No one concerned with the cultivation of grapes can afford to be without this book.

American Rhone
Regular price $34.95 Save $-34.95American Rhône is the untold history of the American Rhône wine movement. The popularity of these wines has been hard fought; this is a story of fringe players, unknown varieties, and longshot efforts finding their way to the mainstream. It’s the story of winemakers gathering sufficient strength in numbers to forge a triumph of the obscure and the brash. But, more than this, it is the story of the maturation of the American palate and a new republic of wine lovers whose restless tastes and curiosity led them to Rhône wines just as those wines were reaching a critical mass in the marketplace. Patrick J. Comiskey’s history of the American Rhône wine movement is both a compelling underdog success story and an essential reference for the wine professional.

Word of Mouth
Regular price $29.95 Save $-29.95What does it mean, Ferguson asks, to cook and consume in a globalized culinary world subject to vertiginous change? Answers to this question demand a mastery of food talk in all its forms and applications. To prove its case, Word of Mouth draws on a broad range of cultural documents from interviews, cookbooks, and novels to comic strips, essays, and films.
Although the United States supplies the primary focus of Ferguson's explorations, the French connection remains vital. American food culture comes of age in dialogue with French cuisine even as it strikes out on its own. In the twenty-first century, culinary modernity sets haute food against haute cuisine, creativity against convention, and the individual dish over the communal meal. Ferguson finds a new level of sophistication in what we thought that we already knew: the real pleasure in eating comes through knowing how to talk about it.

Chianti Classico
Regular price $39.95 Save $-39.95
This book tells the story of the ancient land named Chianti and the modern wine appellation known as Chianti Classico. In 1716, Tuscany’s penultimate Medici ruler, Cosimo III, anointed the region of Chianti, along with three smaller areas in the Florentine State, as the world’s first legal appellations of origin for wine. In the succeeding centuries, this milestone was all but forgotten. By the late nineteenth century, the name Chianti, rather than signifying this historic region and its celebrated wine, identified a simple Italian red table wine in a straw-covered flask.
In the twenty-first century, Chianti Classico emerged as one of Italy’s most dynamic and fashionable wine zones. Chianti Classico relates the fascinating evolution of Chianti as a wine region and reveals its geographic and cultural complexity. Bill Nesto, MW, and Frances Di Savino explore the townships of Chianti Classico and introduce readers to the modern-day winegrowers who are helping to transform the region. The secrets of Sangiovese, the principal vine variety of Chianti, are also revealed as the book unlocks the myths and mysteries of one of Italy’s most storied wine regions. The publication of Chianti Classico coincides with the three hundredth anniversary of the Medici decree delimiting the region of Chianti on September 24, 1716.

A Bite-Sized History of Italy
Regular price $27.99 Save $-27.99While Italy has existed as a nation-state only since 1861, a distinctly Italian identity had been simmering for centuries, nourished by a shared culinary culture. From the dormice and garum of the Roman Empire to the heresy of pineapple pizza, A Bite-Sized History of Italy traces this legacy, offering a delicious romp through millennia of culinary tradition and transformation.
Author Danielle Callegari, associate professor at Dartmouth and co-host of the Gola podcast, guides readers on a spirited tour through the kitchens, vineyards, city squares, and coastal ports of the iconic peninsula, offering an intimate portrait of a place so famous for its food it nearly defies interrogation—even as it might be said that food is the very reason for its existence.
With boundless energy and a fearless palate, Callegari explores beloved staples—pizza, pasta, parmigiano—alongside the unsung flavors that shaped Italian identity: legumes, wild herbs, game birds, spices, and the contributions of Jewish and other minority communities. She reveals how Italy’s rise as Europe’s gastronomic heart is rooted in religious customs, class dynamics, and the echoes of empire, as well as how food became a language of both unity and division.
Through stories of what was eaten, and by whom, this latest addition to The New Press’s standout Bite-Sized series, A Bite-Sized History of Italy offers a glimpse of the making of Italy itself—a nation defined, defended, and devoured around the table.

Food Futures
Regular price $39.95 Save $-39.95Food Futures is a compilation of unique design projects that act as visual stimulus for designers and food enthusiasts alike, illustrating the possibilities that new technologies open up to designers and the different ways society perceives food.
The aestheticisation of food is a growing phenomenon for both designers and consumers alike. Designers are increasingly identifying food as an object that speaks a global language, as an effective communication medium to visualise and express their ideas.
Aside from the role a designer plays in the process of food fabrication, industrial practices too contribute to the alteration of shape, colour, scent and consistency of food, transforming it before our eyes, for our eyes. Food Futures seeks to exist as a stimulating visual collection of experimentation and innovation in food design, posing questions and challenging how we perceive this everyday commodity.
Food Futures is structured in three main sections, each of which will encompass design projects appropriate to different categories. These sections will help to shape an understanding of the various ways in which the project has been fabricated and will be titled, respectively, 'Two Dimensional', 'Three Dimensional' and 'Multi Sensory' (experiential).

The Epic History of Macaroni and Cheese
Regular price $28.95 Save $-28.95Today, macaroni and cheese is the ultimate comfort food, a staple of weeknight dinners, family gatherings, and Soul Food restaurants. Humble though the dish may seem, its history is filled with surprising twists and turns. Renaissance cardinals and popes dined on elaborate pasta-and-cheese concoctions laced with costly spices. In the eighteenth century, wealthy young Englishmen made macaroni a symbol of continental sophistication. Black women cooks, whose contribution has long been overshadowed, played a crucial role in establishing the dish as an American tradition from the nation’s founding through the Civil Rights Movement.
This book is a delectable history of macaroni and cheese, tracing an extraordinary journey of cultural exchange and social change. Karima Moyer-Nocchi reveals the religious, political, and industrial forces that forged its evolution alongside stories of the unsung figures who shaped the dish as we know it today: enslaved cooks who preserved and adapted traditions, immigrant chefs who introduced new variations, and practical homemakers looking to nourish their families with an affordable meal. She emphasizes the adaptability of macaroni and cheese, which in different times has served as both an indulgence on the elite table and sustenance to those struggling to survive, crossing borders, social classes, and cultural divides. Deeply researched and rich with enticing details, this book uncovers the creativity and resilience that brought a beloved food to our tables. The Epic History of Macaroni and Cheese also shares centuries of recipes—from ancient Roman authors to celebrity chefs, reworked for modern kitchens—that provide a hands-on portal to experience the evolution of this iconic dish.

Born to Cree parents and raised by a Métis father and Mi’kmaw-Irish mother, Shane M. The Gourmand's Lemon. A Collection of Stories and Recipes
Regular price $50.00 Save $-50.00The deceptively simple lemon takes center stage in the second volume of TASCHEN’s collaboration with The Gourmand, masters of the rich intersection of food and art. The star of Renaissance gardens, that shaped the Medici dynasty, have the power to ward off scurvy, had a hand in forming the mob, and whose juice has been used as an invisible ink since 600 CE to pen covert messages, these joyful yellow orbs are ripe with intrigue. The Gourmand charts the fruit’s astonishingly intricate genealogy, explores its role as a literary device for the likes of Joan Didion, F. Scott Fitzgerald, Tom Wolfe, and James Joyce, and examines its unique representation of the American dream through lemonade stands. A favorite subject of art history’s giants, the lemon captivates in the still lifes of Old Masters and inspired the breakthroughs of modern visionaries like Picasso, Matisse, and Warhol. Lemons also find themselves at the cutting edge of design in Philippe Starck’s iconic Juicy Salif and the unassuming yet revolutionary Jif Lemon. Their presence extends to the decorative arts, gracing everything from Arts and Crafts wallpapers to mythological ceramics. Even the famed Bloomsbury Group found lemons entangled in their literary love affairs. Accompanying these citrus-centric anecdotes are a foreword by chef and acclaimed food writer Simon Hopkinson and an introduction by art critic and author Jennifer Higgie alongside more than 60 lemon-infused recipes across global cuisines and for every occasion—including perfect poultry, decadent sauces, classic cocktails, and indulgent desserts, with custom photography by Bobby Doherty.

The Lost Supper
Regular price $29.95 Save $-29.95A New Scientist, Globe and Mail, and Eater Best Book of 2023
In the tradition of Michael Pollan, Anthony Bourdain, and Mark Bittman, “a surprising, flavorsome tour of ancient cuisines” (Kirkus, STARRED)—from Neolithic bread to ancient Roman fish sauce—and why reviving the foods of the past is the key to saving the future.
“A fascinating look at the people who are keeping these ancient food traditions alive against the odds, while offering a rough roadmap toward a more sustainable food ecosystem.”—Eater
Many of us are worried (or at least we should be) about the impacts of globalization, pollution, and biotechnology on our diets. Whether it's monoculture crops, hormone-fed beef, or high-fructose corn syrup, industrially-produced foods have troubling consequences for us and the planet. But as culinary diversity diminishes, many people are looking to a surprising place to safeguard the future: into the past.
The Lost Supper explores an idea that is quickly spreading among restaurateurs, food producers, scientists, and gastronomes around the world: that the key to healthy and sustainable eating lies not in looking forward, but in looking back to the foods that have sustained us through our half-million-year existence as a species.
Acclaimed author Taras Grescoe introduces readers to the surprising and forgotten flavors whose revival is captivating food-lovers around the world: ancient sourdough bread last baked by Egyptian pharaohs; raw-milk farmhouse cheese from critically endangered British dairy cattle; ham from Spanish pata negra pigs that have been foraging on acorns on a secluded island since before the United States was a nation; and olive oil from wild olive trees uniquely capable of resisting quickly evolving pests and modern pathogens.
From Ancient Roman fish sauce to Aztec caviar to the long-thought-extinct silphium, The Lost Supper is a deep dive into the latest frontier of global gastronomy—the archaeology of taste. Through vivid writing, history, and first-hand culinary experience, Grescoe sets out a provocative case: in order to save these foods, he argues, we've got to eat them.
Published in partnership with the David Suzuki Institute.

Portrait of an Oyster
Regular price $22.95 Save $-22.95“Narrated with awe and gusto, Andreas Ammer’s Portrait of an Oyster is a must for all who find their joy on the half shell … Funny, thoughtful, and tastebud-piquing”—Foreword Reviews
A gorgeously crafted exploration of the oyster’s role in art, culture, cuisine, science, and history—featuring stunning full-color illustrations.
Everyone recalls eating their first oyster, just like they remember their first kiss …
Portrait of an Oyster delves beyond the shucked shell to reveal the rich and surprising world of the oyster and the artists, philosophers, explorers, and chefs the mollusk has inspired across the centuries. Illustrated with full-color paintings, vintage advertisements, line drawings, and archival photographs, Portrait of an Oyster shares intriguing insights into the biology and cultivation of oysters as the author embarks on an expedition across Europe and North America to taste some of the world’s best.
Did you know that oysters shift their gender several times over the course of their lifetimes? They have one muscle that serves to keep their two shells clamped firmly shut, and a heart and basic circulatory system largely dependent on seawater—although they have no brain or known nervous system.
In the French region of Marennes-Oléron—where much of the technology of modern oysters farming was pioneered—oysters are still considered among the finest in the world. Like champagne, oysters from this region are protected by geographic distinction laws, with some even getting initials lasered into their shells, to preserve their prestige. Portrait of an Oyster travels across France, Europe, and North America, sampling some of the best oysters and restaurants in the world, including in the UK and Copenhagen, and then Boston, New York, New Orleans, and San Francisco.
This book’s stunning features include:
- Full-color paintings, vintage advertisements, and archival photographs.
- Intriguing insights into the biology, reproduction, and cultivation of oysters.
- Sumptuous travelogs to renowned oyster restaurants and oyster farms.
- Unique backmatter: A glorious guide to global oyster varieties, with drawings and descriptions of each specimen.

Menu Design in Europe
Regular price $70.00 Save $-70.00Menu Design in Europe is a mouthwatering feast for the eyes, featuring hundreds of European menus from the early 19th century to the end of the millennium. At once a history of continental cuisine and a sprawling survey of graphic styles, Menu Design in Europe satisfies the craving for foodies and design enthusiasts alike.
The dominance of French cuisine provided the template for the culinary delights that spread throughout (and beyond) the continent. As restaurants and dining experiences increased in the 19th century, the need for a more formal presentation of available items resulted in a range of printed menus that could be both extravagant and simple. The 1891 menu from Paris’s Le Grand Vefour, with its intricate die-cut design, evokes a bustling Belle Epoque bistro, while the 1932 menu from London’s Royal Palace Hotel transports you to the bar at a spirited, Jazz Age nightspot. On the opposite side of the design spectrum, the menu for the mid-century Lasserre restaurant expresses a surrealistic simplicity. A range of stylistic decades is represented, from masterpieces of Art Nouveau and Art Deco to the graphic appropriations of the German Democratic Republic. Also showcased are the Michelin awarded restaurants of the celebrity chef–era and rarities such as a German military menu from World War II.
More than just bills of fare, these menus often represent a memorable dining experience, at times being presented with as much care and attention to detail as the meal itself. So, although one cannot sit in La Tour D’Argent in 1952 and sample its famous duck dish Le Caneton Tour d’Argent, we can surely imagine what it was like when looking at the waterfowl-themed illustration displaying the night’s offerings. Featuring an essay by graphic design historian Steven Heller and captions by ephemerist and antiquarian book dealer Marc Selvaggio, Menu Design In Europe features menus from leading collectors and institutions, providing a sumptuous visual banquet and historical document of two centuries of culinary traditions.

Menu Design in America
Regular price $70.00 Save $-70.00Until restaurants became commonplace in the late 1800s, printed menus for meals were rare commodities reserved for special occasions. As restaurants proliferated, the menu became more than just a culinary listing. The design of the menu became an integral part of eating out and as such menus became a marketing tool and a favored keepsake.
Menu Design is an omnibus showcasing the best examples of this graphic art. With nearly 800 examples, illustrated in vibrant color, this deluxe volume not only showcases this extraordinary collection of paper ephemera but serves as a history of restaurants and dining out in America.
In addition to the menu covers, many menu interiors are featured providing an epicurean tour and insight into more than a hundred years of dining out. An introduction on the history of menu design by graphic design writer Steven Heller and extended captions by culinary historian John Mariani accompany the menus throughout the book. Various photographs of restaurants round out this compendium that will appeal to anyone who enjoys graphic and gastronomic history.

The Gourmand’s Egg. A Collection of Stories and Recipes
Regular price $50.00 Save $-50.00Poached, scrambled, boiled, whipped into a cocktail, transformed into a painting medium, tossed at an enemy’s house. As the most striking of paradoxes, the egg exists in happy suspension between humble household ingredient and ever-powerful source of life.
One of the most enduring symbols throughout antiquity, eggs were used by the Romans to dispel evil spirits, modeled as priceless artifacts for the Russian nobility, and were woven into Egyptian mythology. In the debut volume of TASCHEN’s series with cult-favorite The Gourmand journal, we celebrate the link between food and culture in a visual and literary exploration of the powerhouse kitchen staple. A collection of original essays and archetype recipes, from the perfect poach to artful desserts, celebrates the diversity of culinary traditions around the world.
The Gourmand’s Egg. A Collection of Stories and Recipes is illustrated with exclusive commissions by acclaimed still life photographers—equal parts sumptuous, absurd, lurid, mouthwatering, and undeniably The Gourmand. Rounding out the volume are works from art history’s titans, including Salvador Dalí, Jean-Michel Basquiat, Frida Kahlo, David Hockney, and Man Ray alongside texts from chef, food writer, and critic Ruth Reichl and writer and editor Jennifer Higgie, and more. “In cooking — as in almost every-thing else,” Reichl said. “It all starts with an egg.”

Scheherazade's Feasts
Regular price $99.95 Save $-99.95The author of the thirteenth-century Arabic cookbook Kitāb al-Ṭabīkh proposed that food was among the foremost pleasures in life. Scheherazade's Feasts invites adventurous cooks to test this hypothesis.
From the seventh to the thirteenth centuries, the influence and power of the medieval Islamic world stretched from the Middle East to the Iberian Peninsula, and this Golden Age gave rise to great innovation in gastronomy no less than in science, philosophy, and literature. The medieval Arab culinary empire was vast and varied: with trade and conquest came riches, abundance, new ingredients, and new ideas. The emergence of a luxurious cuisine in this period inspired an extensive body of literature: poets penned lyrics to the beauty of asparagus or the aroma of crushed almonds; nobles documented the dining customs obliged by etiquette and opulence; manuals prescribed meal plans to deepen the pleasure of eating and curtail digestive distress.
Drawn from this wealth of medieval Arabic writing, Scheherazade's Feasts presents more than a hundred recipes for the foods and beverages of a sophisticated and cosmopolitan empire. The recipes are translated from medieval sources and adapted for the modern cook, with replacements suggested for rare ingredients such as the first buds of the date tree or the fat rendered from the tail of a sheep. With the guidance of prolific cookbook writer Habeeb Salloum and his daughters, historians Leila and Muna, these recipes are easy to follow and deliciously appealing. The dishes are framed with verse inspired by them, culinary tips, and tales of the caliphs and kings whose courts demanded their royal preparation. To contextualize these selections, a richly researched introduction details the foodscape of the medieval Islamic world.

Fresh from the Farm
Regular price $28.00 Save $-28.00More than a cookbook...it’s also the story of how a farm came to be. Written by the “Queen of Fresh” Susie Middleton, Fresh from the Farm goes beyond traditional “fresh” cookbooks by sharing the engaging tale of one woman’s quest for a simpler life. In between the recipes, Susie shares the story of how she left the corporate world, started a farm on Martha’s Vineyard, and created a satisfying new life on this rural island.
121 seasonal recipes featuring homegrown produce. Fresh from the Farm is divided into three growing seasons: late spring and early summer, high summer, and what the author refers to as a bonus season, Indian summer and early fall. Here’s just a taste...
- Swiss Chard and Caramelized Onion Quesadillas with Pepper Jack Cheese
- Spicy Thai Shrimp and Baby Bok Choy Stir-Fry
- Curry Coconut Butternut Squash Soup
- “Mac ‘N Cheese” with Kale, Goat Cheese, and Sun Dried Tomatoes
- Summer Veggie-Palooza Paella
- Little Pear Crostatas with Hazelnut Crisp Topping
- and one hundred and nineteen more - all just as tempting and delicious!
Perfect for vegetarians and carnivores alike. Fresh from the Farm is for anyone looking for exciting new ways to prepare vegetable-centric dishes that range from starters to mains to desserts. While the emphasis is on recipes, this book is also a great read. As one reviewer observes:
“...the stories that Middleton shares make the book feel like an old
family cookbook that has been passed down from your great grandmother
with stories of her farm, and why she made each recipe. Middleton
embraces the family farm angle.”
